About Skinny Pancakes
Did you ever order pancakes at a restaurant, particularly at a breakfast diner, that left you absolutely stuffed after a couple of bites of an overly dense, cheap-syrup-coated pancake? I guess I don’t blame diners and breakfast restaurants for this practice; inexpensive and easy to make + immensely filling = extreme profits.
Anyway, my recipe yields mini-pancakes that are delicate and not too fluffy. Actually, this recipe is very similar to my crepes recipe, but with the leavening action of baking powder added.
These pancakes are perfect to accompany your breakfast or Sunday brunch fare. I drizzle them with only organic, unsalted butter and Canadian Grade A Light Amber maple syrup.
I made this recipe for two people. Double or triple the recipe as needed to satisfy hardy appetites or more diners. Serve your skinny pancakes with seasonal berries or spiced rum bananas, and don’t forget the Mimosas!
Ingredients
- 1 cup of flour
- 1 tablespoon of sugar
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 cup of milk
- 1 egg
- 1 tablespoon of water
- 2 teaspoons of canola oil
- room-temperature butter
- warmed maple syrup
Instructions
- In a mixing bowl, sift together the flour, sugar, salt, and baking powder. Gradually whisk in the milk, not worrying about leaving a few lumps in the batter.
- Gently whisk in the egg to incorporate. Cover the bowl with a kitchen towel and set it aside for ten minutes.
- Add the canola oil to the pancake batter and stir. Ladle pancake batter into a hot, greased skillet, one at a time.
- Spin the pan a bit to thin out and even out the pancake circles a bit to 5–6 inches in diameter. Flip the pancake when the surface is full of bubbles and the underside is mottled golden-brown.
- Serve skinny pancakes with Spiced Rum Bananas, warm maple syrup, breakfast sausages and/or bacon, fresh berries, spiced apple slices, spiced peaches, or anything else you crave for an at-home breakfast treat!
