  • 5 ounces Vegetable Oil
  • 3 eggs Eggs
  • 1.5 teaspoons Baking Powder
  • 4 tablespoons Coarsely Ground Almonds
  • ¼ teaspoons Almond Essence:
  • teaspoons Vanilla Essence
  • ½ cup Sliced Almonds

Instructions

Get Ready

  • Preheat your oven to 200°C.
  • Line your baking pan with parchment paper and give it a good grease with oil or butter.

Mix Dry Stuff

  • In one bowl, sift together 1 ⅓ cups of flour and 1.5 teaspoons of baking powder.

Mix Wet Stuff

  • In another bowl, beat together ¾ cup of sugar and ¾ cup of vegetable oil for about 2 minutes.
  • Add 3 eggs, one at a time, and mix well after each.

Add Almonds and Flavor

  • Stir in 4 tablespoons of coarsely ground almonds, ¼ teaspoon of almond essence, and ⅛ teaspoon of vanilla essence.

Fold in the Flour Mix

  • Gradually add the flour and baking powder mix to the wet mix. Fold it in gently with a spatula or wooden spoon.

Into the Pan

  • Pour the batter into your prepared baking tray.

Top It Off

  • Sprinkle ½ cup of sliced almonds on top. They'll get toasty in the oven, adding a nice crunch.

Bake Away

  • Pop it in the oven at 200°C for 25-30 minutes. Stick a skewer in – if it comes out with moist crumbs, you're good to go. If using a larger pan, bake for 35-40 minutes.

Cool Down

  • Let it cool on a wire rack, Once cooled, slice it up and watch your kids (and you) enjoy every almond-filled bite!
